Carrot cake has a unique and delicious flavour. It's often described as moist, sweet, and slightly spiced. The grated carrots in the cake add a subtle earthy sweetness. This simple to follow recipe ensures the carrot cake is a delightful combination of flavours that many will enjoy

Ingredients
200g Carrots grated
175g Dark Soft Brown Sugar
200g Self Raising Flour
2 eggs
150ml Olive Oil
1 Tbsp Mixed Spice
1 Tsp Bicarbonate of Soda
100g Pistachios
1 Lemon zested
100g Sultanas
Preparation
Heat the oven to 180C
Oil and line the base and sides of a 23cm cake tin with baking parchment
To make the cake beat all the ingredients together.
Spoon into the tin and bake for 35 to 40 minutes then allow to cool.
