About the Recipe
Satisfy a curry craving the healthy way with this Indian Prawn dish, complemented with a nice piece of fresh caught Cod
Ingredients
1 Onion, diced
5 cm Ginger grated
2 Garlic Cloves chopped
1 Green Chilli, chopped
400g tin of Plum Tomatoes
1 Red Pepper sliced
1 Yellow Pepper, sliced
1 Orange Pepper, sliced
1 Tbsp Ground Coriander
1 Tbsp Ground Cumin
1 Tsp Turmeric
50g Unsalted Butter
250g Raw Prawns
15g Coriander, chopped
1 Tbsp Sunflower Oil
For the Cod
250g Cod Loin
25g Unsalted Butter
1 Tsp Sunflower Oil
Sea Salt and freshly ground Black Pepper
Preparation
For the sauce
Fry the onions in Sunflower Oil until deeply coloured
Add the Garlic and Ginger, cook for another 2 minutes
Add all the remaining ingredients, stir and gently bubble for 5 minutes
Pop in the prawns and cook for another 5 minutes
Finish with Coriander and Butter
For the Cod
Meanwhile, season the Cod and cook in the Oil skin side down for 3 to 4 minutes
Flip over, add the butter and cook for another 3 minutes
To serve, spoon the sauce onto plates, top with the fish
