About the Recipe

Piri Piri sauce is a little spicy, a little sweet, a bit salty, and all around complex. It is like a little explosion of flavour in your mouth. The step that makes this chicken flavour central is the little crunch from the cabbage

Ingredients

1 skinless Chicken Breast, cooked and sliced lengthways

50ml Mayonnaise

1 Tbsp Piri Piri Sauce, or to your taste

10g Parsley leaves, chopped

10g Mint leaves, chopped

8 Spring Onions, sliced

1 quarter Red Cabbage, sliced

2 Tbsp Cider Vinegar

4 Wholemeal Tortilla Wraps

Seasoning to your taste

Preparation

Place the Red Cabbage in a large bowl and add the Cider Vinegar

Leave for 30 minutes and then drain

Combine all the remaining ingredients in the bowl and season to taste


Warm the Wraps in accordance with packet instructions


Place chicken mix on each Tortilla Wrap and fold tightly


Serve and enjoy
