About the Recipe

Looking for an interesting lunch idea? The classic club sandwich never goes out of fashion.

Ingredients

2 Tbsp Rapeseed Oil

12 rashers of rindless Streaky Bacon

6 Tbsp Light Mayonnaise

2 small Little Gem lettuces, leaves separated

200g cooked Chicken Breast

2 ripe Avocados, peeled, stones removed and sliced thinly

2 Tbsp Chives, chopped

Half a Cucumber, sliced thinly

4 Tomatoes, sliced thinly

12 slices of Wholemeal Bread

Gherkins, sliced lengthways, to serve

Sea Salt & Freshly Ground Black Pepper

Preparation

Heat a large frying pan with the 1 Tbsp Oil

Cook the Bacon until crisp and brown

Transfer to kitchen paper


Add the remaining Oil to the pan and fry 8 slices of Bread for 2 minutes on one side until golden brown


Lay 8 slices of cooked Bread, golden side down, and remaining 4 slices of Bread on a flat working surface

Spread each with Mayonnaise

Top 4 of the slices with Lettuce

Place the Chicken and Avocado over them

Scatter over the Chives

Top this with the uncooked sliced Bread

Add the Cucumber, Tomatoes and Bacon

Season to your own taste

Cover with the remaining slices of Bread, golden side up

Secure each sandwich with 2 cocktail sticks and slice into halves diagonally


Arrange on the serving plates with the sliced Gherkin and Potato Crisps to one side
