About the Recipe
There are many ways to eat cheese on toast, as we would call it in the UK, or grilled cheese. This recipe is for an awesome British cheese and tomato sandwich that you melt under the grill.
Ingredients
1 Sourdough Loaf, 4 thick slices taken from the middle
30g Unsalted Butter
1 Beef Tomato, 4 slices
100g Gruyere Cheese, grated
100g Cheddar Cheese, grated
2 Tbsp Mayonnaise
Preparation
Melt half the butter in a frying p[an
Add 2 slices of Bread and cook for 3 - 4 minutes, or until brown and toasted
Remove and place on a cutting board or each
Add the remaining 2 slices and butter and repeat
On each of the non toasted sides of bread smooth over a thin layer of Mayonnaise (this will help keep the bread dry)
With the tomatoes, remove the watery seed and dry thoroughly on kitchen paper (it is best to do this 30 minutes in advance to maximise the drying up of the tomato )
In a bowl, mix together the two grated Cheeses
On two slices add as much cheese as the bread can hold
Place under a hot grill and cook for 3 minutes, or until the cheese melts
Remove from the grill and add 2 slices of Tomato to each
Add the remaining cheese and return under the grill
Cook for a further 3 minutes, or until the cheese is melted and oozy
Remove from the grill
Place the other 2 slices on top
Squash down and cut through the middle with a serrated knife
Simple, but it really is so good
