About the Recipe

This quick and easy recipe can be made in under 20 minutes, perfect for a weeknight dinner! The flavours from this creamy coconut prawn curry sauce are unbelievable. It is guaranteed to be a winner with all the family!

Ingredients

1 Tbsp Vegetable oil

8 Spring Onions, thinly sliced, green parts reserves

1  Red Chilli, thinly sliced

10g pack Coriander, stalks chopped, plus leaves, to serve

4 Tbsp Thai Red Curry Paste

400g Coconut Milk

120g extra fine Green Beans, halved

250g Raw King Prawns

150g Thai Hom Mali Rice, to serve

1  Lime, cut into 4 wedges

Preparation

Heat the oil in a lidded frying pan

Add the Spring Onions, the Chilli and Coriander stalks

Fry for 2 minutes

Stir in the Curry Paste and Coconut Milk, then bring to a simmer

Add the Green Beans, Prawns and a little salt, then return to a simmer

Cover and cook for 4-5 minutes or until the Prawns are pink, opaque and cooked through

Scatter over the Coriander leaves and reserved green Spring Onions

Serve with the Rice and Lime wedges.
