Salmon Burger

To make healthy swaps for some of our indulgent favourites. This Salmon Burger is a satisfying switch and a meal you can feel good about.

Ingredients

4 Salmon Fillets
6 Spring Onions, chopped roughly
20 g Dill, chopped
10 g Parsley, chopped
1 Lemon, zest and juice
Sea Salt & freshly Ground Black Pepper
1 Tbsp Rapeseed Oil
4 Brioche Buns
80 ml Mayonnaise
20 Capers, chopped
Rocket

Method

Place the Salmon Fillets, Spring Onions, Parsley, half the Dill and Lemon
in a food processor and pulse until roughly broken up.
Do not break it down to a complete paste
Shape the mixture into 4 Burgers
Leave in the fridge for 1-2 hours
Set the Oven to 200 degrees C
Bake the Burgers in the oven for 12-15 minutes or until cooked through
In a small bowl mix together the Mayonnaise, remaining half of the Dill and Capers
Cut each Brioche Bun in half and lightly grill the cut side
Cover the base of each bun with the Mayonnaise mixture
Place the Salmon Burger on top
Finish with some Rocket and cap off with the remaining half of each Bun
