Ingredients

For the Jelly

200g frozen Blackcurrants

100g frozen Blackberries

75g Caster Sugar

2 Tbsp Crème de Cassis

3 large Gelatine leaves, soaked in cold water until softened, then drained

For the Blackcurrant Mousse

500g frozen Mixed Berries

3 Tbsp Crème de Cassis

4 large Gelatine leaves, soaked in cold water until softened, then drained

150g Caster Sugar

2 Egg whites

300ml Double Cream

23cm ready-made sponge Flan case

Small handful of Strawberries

Small handful fresh Raspberries

Small handful fresh Mint sprigs
