Chinese Fried Rice

Fried rice is a quick and easy dinner solutions. Just add whatever you like, prawns, chicken, pork... to make a more substantial meal

Ingredients

700 ml Water
0.5 Tsp Sea Salt
300 g Long Grain Rice
2 Eggs
4 Tsp Cold Water
3 Tbsp Sunflower Oil
6 Spring Onions, sliced diagonally
1 Red Pepper, cored, deseeded and sliced thinly
3-4 Bacon rindless rashers, cut into strips
200 g Fresh Beansprouts
125 g Frozen Peas
2 Tbsp Soy Sauce
Sea Salt & Freshly Ground Black Pepper

Method

Pour the Water into a Wok with the Sea Salt and bring to the boil
Add Rice to the boiling water
Stir well and then cover with a lid
Simmer gently for 10-12 minutes
Do not remove the lid while it is cooking or steam will escape and rice will not cook
Remove the lid and give the Rice a good stir
Spread out on a large plate or baking tray to cool and dry
Meanwhile beat each Egg separately with Sea Salt and Pepper and 2 Tsp of cold water
Heat 1 Tbsp Oil in a preheated Wok
Pour in the first Egg, swirl around and leave to cook undisturbed until set
Transfer to a chopping board and repeat with the second Egg
Cut the Omelette into thin slices
Add the remaining Oil to the Wok
and when really hot add the Spring Onions and Pepper
Stir fry for 1-2 minutes
Add the Beansprouts and Peas and stir together thoroughly
Stir in the Soy Sauce
Add the Rice and season to taste
Fry for 1 minute
Add the strips of Omelette and continue to fry for 2 Minutes or until the Rice is hot
Serve immediately
