A vegetarian meal makes a change during the week so try these healthy burgers. They are tasty and quite simple to make. Serve these with Pitta breads, Tomato Salsa and Salad.
400 g can Chickpeas, rinsed, drained and patted dry on kitchen paper
1 small Red Onion, roughly chopped
1 Garlic Clove, chopped
15 g Flat Leaf Parsley
1 Tsp Ground Cumin
1 Tsp Ground Coriander
1⁄2 Tsp Chilli Powder
2 Tbsp Plain Flour
2 Tbsp Rapeseed Oil
Pitta bread, to serve
200 g Tomato salsa, to serve
Green Salad, to serve
Tip the Chickpeas into a food processor along with the chopped Onion, Garlic Clove, Parsley, Ground Cumin, Ground Coriander, Chilli Powder, Pain Flour and a little salt.
Blend until fairly smooth, then shape into four patties with your hands.
Heat Rapeseed Oil in a non-stick frying pan, add the burgers, then quickly fry for 3 mins on each side until lightly golden.
Serve with Pitta Bread, Tomato Salsa and a Green Salad.
