Sausage, Pepper, Onion, Celery and Potato Bake

Simple and delicious, this one-pan Sausage and Potatoes Recipe is filled with Onion, your favourite Sausage, Peppers, Celery and Baby Potatoes. Enjoy this hearty, family-friendly dinner as a quick weeknight meal and enjoy any leftovers the next afternoon, if there are any!

Sausage, Pepper, Onion, Celery and Potato Bake

Ingredients

6 Sausages, of your choice, pricked with a fork
8 New or Small Potatoes, cut in half
3 Mixed Peppers, deseeded and diced
2 Celery Sticks, chopped
1 Onion. peeled and cut in to wedges
1 Red Onion, peeled and cut in to wedges
3 Sprigs of Thyme, leaves only
2 Tbsp Rapeseed Oil
100 ml White Wine
Sea Salt & Freshly Ground Black Pepper

Method

Heat the oven to 200 degrees C
In a large bowl place all of the ingredients, except the seasoning and White Wine
Mix to ensure all are coated in the Oil and Thyme
Tip all of the ingredients in to a large ovenproof dish
Season well with Salt and Pepper
Ensure the Sausages are not covered by the vegetables
Place in the oven and cook for 35 minutes
Remove the Sausages and mix the vegetables well
Replace the Sausages dark brown side down
Add the White Wine
Cook for a further 20 minutes
Serve with Peas or homemade Coleslaw
