FISH WRAP

Serves 4

Ingredients​​

4 flour tortillas (10 inches)

200 g Pack of Lemon Goujons

90 ml Mayonnaise

1 Tbsp Chilli Paste of choice such as Chipotle or Harissa (optional)

1 Red Onion, peeled and chopped finely

2 Tomatoes, chopped

1 Avocado, scooped and sliced

200 g fresh White Cabbage, sliced finely

15g Coriander, leaves picked and chopped

Juice of 1 Lime

6 Radishes, chopped

Method:

 ​

Heat oven to 200C

Space the Goujons apart on a baking sheet and bake for 12-15 mins, following pack instructions

Meanwhile, mix the chipotle or harissa into the mayo

Warm the tortillas in oven according to packet instructions

To make the salad, toss the cabbage, radishes, tomatoes, avocado, coriander and onion with the lime juice and some Sea Salt and Ground Black Pepper

Spread the tortillas with a little spicy mayo, then place the salad and fish down the centre. 

Top with a little more spicy mayo, then fold and eat with your fingers.
