FISH FINGER BUTTY WITH LEMON MAYONNAISE

Serves 4

Ingredients

 

4 Breaded Haddock Fillets

80 ml Light Mayonnaise

1 Lemon, zest only

2 Tbsp Capers, chopped

23 Tbsp Dill, leaves picked and chopped

4 Wholemeal Rolls

50 g Rocket

Sea Salt & Freshly Ground Black Pepper

How to cook

 

Mix together the Mayonnaise, Lemon zest, Capers and Dill. Season to taste

Cook the Haddock fillets according to packet instructions in a Pre-heated Oven

Cut the Rolls in half

Spread the Lemon Mayonnaise on the bottom halves

Add the Fish fillets and Rocket

Replace top of the Roll and serve
