Avocado, Chorizo & Prawn Wraps


Serves 4



4 ripe Avocados

1 Tbsp Balsamic Vinegar

2 tbsp Mayonnaise

350 g Cooked Prawns

50 g Chorizo, sliced

50 g Rocket

4 Soft Flour Tortillas

Sea salt & Freshly Ground Black Pepper


How to cook


Heat a large frying pan

Fry the Chorizo for 2-3 minutes, or until cooked

Allow to cool

Cut the Avocados in half, remove the stones, then scoop the flesh into a bowl

Add the Balsamic Vinegar and Mayonnaise

Season to taste and mash with a fork to a smooth texture

Heat the Tortillas for 30 seconds each in a clean frying pan, turning once

Place the Tortillas on a flat surface and spoon a quarter of the Avocado puree down the middle of each Tortilla 

Divide the Rocket, Chorizo and Prawns between each

Roll up each Tortilla, turning both ends inwards to enclose the filling

Cut each in half on the diagonal and arrange on the serving plates with some potato crisps to one side
